Our Story
Spruce Confections was started in 1992 by David Cohen while living in his best friend's basement on Spruce Street. Armed with a wooden spoon, mixing bowl, some butter, oats and a bad baking habit, Spruce began with the now famous "Old B Cookie"*. David hand delivered these cookies to local coffee shops on lunch breaks while working at a cafe on the Pearl Street mall.
Having a background in music composition from Oberlin Conservatory and no formal kitchen or business training, he spent his days figuring everything out from scratch. Baking, delivering, bookkeeping, sales, and so forth was a seven day a week job for the early years.
Today he has surrounded himself with the absolute best people in town and attributes the success and growth of Spruce to his talented and hard-working team.
Here at Spruce, we are proud to make everything in house every day, using great ingredients right before your eyes in our open kitchens. Known to locals for our exceptional scones, handmade pastries, small batch soups, elegant birthday cakes, cupcakes, Kaladi coffee and more; we always strive to improve our offerings and create a space for the community to connect.
* the Old B. was named after the co-op where he was randomly elected to be a dessert baker at Oberlin
