Spruce Confections started in 1992, when founder David Cohen began baking cookies in his best friend’s basement on Spruce Street. Armed with a wooden spoon and a love for good food, he hand-delivered his now-famous “Old B Cookie” to local cafés. What began as a one-man operation grew into a Boulder favorite, where that same from-scratch spirit still lives on in every scone, pastry, and soup we make daily.
